Eating healthy doesn’t have to be boring, and especially in times like these, it’s important to mix up your daily routine and add some color and fun into your diet! And we’re so thankful to have trainers that know the importance of nutrition, like Jason Buhay up at Bay Club Portland who shared with us this incredible recipe. Get ready for a tasty salad to brighten up your day!
So, let’s flip the script and integrate the whole family! Time for a salad bar! If the kids are old enough they can do some of the prep too (we don’t mind a little help!). As Jason likes to say, “Food for your Family, Fuel for your Future!”
First, follow the recipe for the tofu, dressing, and then toppings. Fill free to mix up the protein, dressing, or toppings to your family’s preferences!
Asian Garlic Tofu
Ingredients
1 block of tofu (16 oz.) cut + cubed
2 cloves garlic crushed
1 teaspoon ground ginger
2 tablespoons soy sauce (low sodium)
2 tablespoons vinegar
1 tablespoon agave
1/2 teaspoon garlic powder
1/2 teaspoon of onion powder + ground ginger
Mix together and marinate for at least an hour in the fridge.
Dressing
1 teaspoon of sesame oil
2 tablespoons of apple cider vinegar
1 crushed clove of garlic
1 tablespoon of olive oil
2 teaspoons soy sauce (low sodium)
2 teaspoons of agave
1 splash of lemon juice
Salad Bar Toppings
Yellow pepper,
Red pepper
Cucumbers
Carrots
Sun-dried tomatoes
Mandarin oranges
Cilantro
Avocado
Fried jalapenos
Combine the ingredients and top of a bowl of spring mix. Enjoy!
