2 Apple Desserts You’ll Be Thankful For

In the great Thanksgiving debate, you’ll either fall on the side of Team Apple or Team Pumpkin, and that’s even if you’ve saved enough room for dessert! And while we’re partial to apple over here on One Lombard, we also like to think outside the pie when it comes to a little something sweet on the Thanksgiving table. Enter these two a-peeling desserts for adults and kids alike: A baked Apple Crisp that can be perfectly personalized with a toppings bar and Mini Caramel Apple Pops dipped in just the right amount of fall flair.

Apple Crisp
(Makes two 6” ramekins or three 4” ramekins)

Filling Ingredients
2 medium apples (we used a mix of tart and sweet, one Granny Smith, and one Honeycrisp)
2 tbsp maple syrup
1 tbsp water
1/2 tsp cinnamon
1 tsp arrowroot starch or cornstarch (for thickening)
Squeeze of lemon

Crumble Topping Ingredients
1/4 cup pastry flour
1/2 cup rolled oats
1/4 tsp salt
1/3 cup coconut oil, melted
1/4 cup maple syrup
Optional: 2 tsp poppy seeds (or flax seeds)

Directions
Preheat the oven to 350.

Peel apples, then thinly slice them. Add the sliced apples to a bowl with all filling ingredient, accept lemon, and mix well. Add the squeeze of lemon, toss, then set aside.

In a separate bowl, add all the crumble topping ingredients and mix well.

To assemble, add apples to the ramekins, then add the crumble on top. Bake for 25–30 minutes, until topping is golden brown.

Let sit at room temperature for at least 10 minutes before serving. Then, add toppings of your choice: Brown sugar, whipped cream, walnuts, or sprinkles. Enjoy!

Mini Caramel Apple Pops

Ingredients
Granny smith apples
Melting caramels and chocolates (we used dark and white)
Sprinkles
Chopped nuts of your choice

Directions*
Slice apples in half. Using a melon baller, scoop apple rounds. Dry off apple rounds with a paper towel.

Begin melting the caramel, then chocolates.

Dip lollipop sticks into the caramel, then insert them into the apple rounds to create a seal. Place them on parchment paper, then pop them into the freezer for 10 minutes.

Pull apple pops out of freezer, then dip in sauces, and add desired toppings. Place them back in the freezer for another 10–15 minutes until the caramel and chocolate hardens.

*Tip: Dry apples before and after every step before dipping to ensure dryness so that sauces stick to the apples.
