You read the pumpkin—we’re here for the pie! But not only pie this holiday season, but pumpkin in every form. And who knew they were so versatile? So we’ve got three ways to mix up your pumpkins this year, from a savory treat, to a thoughtful gift, and decor for your home. Now, these are squash goals!
Pumpkin Hummus
Ingredients
1 can chickpeas, drained and thoroughly rinsed
2/3 cup pumpkin puree
1 lemon, juiced
1 tbsp tahini
1 tbsp olive oil
1 large clove of garlic (or 2 small)
1/2 tsp salt
1/2 tsp ground cumin
Dash of ground cinnamon
For garnish: Smoked paprika, toasted pumpkin seeds, olive oil
Directions for Pumpkin Hummus
Combine all ingredients in a blender and blend until smooth.
If it’s too thick, add a splash of olive oil and/or water.
Taste with a pita chip (or veggies, if planning to serve hummus with them) and adjust salt to taste.
Transfer into a serving bowl and garnish with a drizzle of olive oil, smoked paprika, and toasted pumpkin seeds.
Pumpkin Body Scrub
Ingredients
1/2 cup pumpkin puree
1 tbsp coconut oil, softened
1 cup coarse cane sugar
1/2 tsp pumpkin spice (can sub with cinnamon)
Steps for Pumpkin Body Scrub
In a medium bowl, combine pumpkin puree and coconut oil, and mix well. Make sure the coconut oil is soft but not warm, so it doesn’t dissolve the sugar.
Add the sugar and pumpkin spice, and mix until smooth.
Transfer into an air tight container.
Keep in fridge until ready to be used (or gifted) so the sugar doesn’t dissolve as quickly. If the sugar does dissolve, it can still be used as a moisturizer!
Pumpkin Letter Board
Tools
3/4 inch or 1 inch letter board letters
Nail polish*
Sharp paring knife
Pumpkin
*You can also use acrylic paint, if you have it on hand, but we found that it is much more convenient (and cost effective!) to use nail polish and their brushes (perfect size for mini letters). Nail polish goes on and stays on easily.
Steps for Pumpkin Letter Board
First, decide what you want your pumpkin to say. Make sure you have enough letters and that it will fit on your pumpkin.
Paint the letters with the nail polish. Set aside for 10 minutes and let them dry.
Use the paring knife to create little holes in the pumpkin, aligned with the notch on the letters.
Press the letter into the hole made with the knife.
