The Perfect Popsicles For Your Weekend

If you needed a reminder that summer is in full effect, the last week’s soaring temperatures probably did the trick, with parts of California experiencing record heat streaks of 100+ temps for nearly a week. And when the days get hot, we find all the creative ways we can to stay cool. So in addition to settling into a shaded lounge chair, or planting ourselves at the pool, we’re crafting some homemade popsicles that are the perfect summer treat—and a delicious way to beat the heat!

These popsicles are free of refined sugar, easy to make, and a great snack for both kids and adults. We have a feeling they’ll quickly become the most popular snack to stay cool!

Tropical Pops

Ingredients
1 cup of pineapple (fresh or frozen)
2/3 cup of coconut milk
1/3 cup of coconut water
1/2 of a banana
Juice of 1 small lemon
Slices of pineapple, banana, and coconut flakes for molds (optional)

Instructions
Combine all ingredients in a blender and blend until smooth.

Fill 6 popsicle molds, leaving ½ inch of room at the top. Add chunks of pineapple and banana, and top with coconut flakes.

Insert popsicle sticks, and freeze for 6 hours.

Strawberry Watermelon Pops

Ingredients
2 cups of seedless watermelon, cubed
1 cup of strawberries, quartered
3-5 mint leaves
Juice of 1 small lime
Slices of strawberries for molds (optional)

Instructions
Combine all ingredients in a blender and blend until smooth.

Fill 6 popsicle molds, leaving ½ inch of room at the top. Add the strawberry slices to the molds.

Insert popsicle sticks, and freeze for 6 hours.

Blueberry Yogurt Pops

Ingredients
1/2 cup of greek yogurt
1 cup of unsweetened almond milk
3/4 cup of blueberries
1 heaping tablespoon of all natural blackberry jam
Additional blueberries for molds (optional)

Instructions
Combine all ingredients in a blender and blend until smooth.

Fill 6 popsicle molds, leaving 1/2 inch of room at the top. Add additional blueberries to the molds.

Insert popsicle sticks, and freeze for 6 hours.
