Sweet Treats for your Summer Campfires

One of our favorite ways to spend a summer night is gathered around an outdoor fire. Whether you set up a campfire in the woods, pitch a crafty fireplace in your own backyard, or enjoy a moonlit night at one of our outdoor Bay Club fire pits, there’s something magical about winding down the evening with a crackling fire in front of you. Of course, enjoying an outdoor fire comes with one more essential ingredient: Some tasty fire-side snacks. And gone are the days when simple s’mores please a crowd—well actually, we’ve never met anyone who turned down a simple s’more! But today’s fireside snackers dine on confections that are just a bit more creative, and, may we add, healthy! We were happy to do you the favor of taste-testing these three recipes, from oat-filled apples, to toasted bananas, to s’more-inspired cones. These recipes will turn a late summer night into a great summer night.

Baked Apples

Ingredients
3 whole apples
1/2 cup oats
3 tablespoons of flour
1/4 cup raisins
1/4 cup sliced almonds
1/4 cup coconut oil (softened)
1/4 cup maple syrup
Pinch of salt
1/4 tablespoon cinnamon

Instructions
1. Preheat oven to 350 degrees (or place on grill)
2. Slice 1 inch off top of apple
3. Cut out core and seeds
4. Scoop out a bowl shape inside apple
5. Mix all ingredients together in bowl
6. Fill apple with mixed ingredients
7. Cover baking sheet with aluminum foil (the juice from the apple will seep out)
8. Place filled apples on baking sheet
9. Bake for 30-35 minutes

Campfire Bananas

Ingredients
Whole ripened bananas
Chocolate chips (we used bittersweet)
Nut butter
Marshmallows

Instructions
1. Preheat oven to 350 degrees (or place on grill)
2. With banana in U shape pointing upward, peel a line down the center
3. Keeping the banana in its peel, slice banana in half
4. Pull banana apart enough to fit toppings inside
5. Fill space with nut butter
6. Sprinkle chocolate chips and marshmallows on the nut butter
7. Trim off tops of banana peels
8. Wrap bananas in aluminum foil boats and place on baking sheet in oven
9. Cook for 10 – 15 minutes (until peel is blackened and insides are melted)

S’more Ice Cream Cones

Ingredients
Crushed/crumbled graham crackers
Peanut butter chips
Marshmallows
Chocolate chips (we used bittersweet)
Ice cream cones (we used sugar cones)

Instructions
1. Preheat oven to 350 degrees (or place on grill)
2. Fill up ice cream cones with desired ingredients

TIP: Marshmallows work great as a base and topping because the stickiness holds everything else together

3. Wrap up filled ice cream cones in aluminum foil
4. Place wrapped cones on baking sheet
5. Bake for 10 – 15 minutes
