Roasted Chickpeas 2 Ways

Roasted Chickpeas 2 Ways

As much as we love snacking on chips, popcorn, and occasionally cookies, we know that it can become a pretty bad habit, especially when trying to be a little bit healthier. We often find ourselves looking for that healthier option, and have a hard time finding something that satisfies the extra crunch, flavor, while still being filling. So, we introduce crispy, roasted chickpeas—everything that you’re looking for! And you may or may not know about the health benefits of chickpeas as well—not only are they a great source of protein, but also high in fiber, vitamin B, iron, and zinc. We’ve got two roasted chickpea flavors, BBQ, and Chili-Lime that are simple to make, and delicious—plus two different ways to eat them!

BBQ Chickpeas Ingredients
1 can of chickpeas (15 oz.)
5 tbsp avocado oil (or canola oil)
1 tsp maple syrup
1/2 tsp salt
1/4 tsp smoked paprika
1/4 tsp chili powder
1/4 tsp garlic powder
1/4 tsp onion powder
Black pepper to taste

Chili-Lime Ingredients
1 can of chickpeas (15 oz.)
5 tbsp avocado oil (or canola oil)
Zest of one lime
1 tsp chili powder
1/4 tsp garlic powder
1/2 tsp salt
Black pepper to taste

Directions (for both!)

1. Preheat your oven to 400 degrees F

2. Drain and rinse the chickpeas. Dry them off with a (paper) towel to remove the moisture and any loose chickpea skins. The drier they are, the crunchier they’ll get!

3. Toss the chickpeas in the avocado oil on a baking sheet. Bake them in the oven until they’re toasted and golden-brown, about 25-30 minutes. Make sure to check in on them halfway through to toss them around to make sure they get toasted evenly.

4. While the chickpeas are in the oven, get the spices ready. Add the remaining ingredients in a medium bowl, and whisk them together until well combined.

5. Once the chickpeas are ready, toss them in the spices. There should still be some oil on the chickpeas to make the spices stick, but if there isn’t, add a drizzle of oil.

6. Put the chickpeas back in the oven to bake for another 15-20 minutes, checking in every 5 minutes to toss them around.

7. Once crunchy, remove them from the oven and enjoy!

We couldn’t leave this recipe without some extra recipes to spice up your chickpeas a little bit more.

3. Drizzle on a dressing of your choice (we used a spicy cashew ranch dressing)

And there you go! The crunchy addition to your life you’ve been looking for.
